By Peter Martin

Article from Issue 371 – May 2025

Menorca Rugby Club is based in Mahón, Menorca, Islas Baleares, Spain

The club’s concept is built around the values of respect, teamwork, loyalty and discipline, all of which are fundamental to the sport of rugby. These values aim to enrich the lives of players, fostering camaraderie, integrity and personal growth, ultimately contributing to a stronger and more compassionate society.

HOW DID IT ALL START?
It all began with a casual conversation over beers between Dan Osterbery and Paul Marsh at the Reina Isabel in S’Algar around the year 2000. As the night wore on and the beers flowed, their discussion turned to rugby and by the tenth beer an idea was born: to form a rugby club in Menorca. The next week Dan and Paul met up with Gary Butcher and Darren Rogers, two rugby enthusiasts from Sussex, at Bar Jamboree in Arenal d’en Castell. The four men hatched a plan to spread the word about their new venture. They placed an advert in the local paper, Diario, announcing rugby training sessions on Arenal beach on Tuesdays and Thursdays. The response was overwhelming, more than 30 people turned up for the first session, representing a diverse mix of nationalities, including Irish, Scottish, Argentinian, Menorcan, English and Welsh. Encouraged by the turnout, the group organised further beach sessions.

Meanwhile, Dan had been in touch with Paola at the golf club in Son Parc, who kindly offered the use of the club’s driving range for training. This generous offer prompted the group to formalise their club. With the help of Nick Cook,
who assisted with language and notary meetings, Menorca Rugby Club was officially established. Nick’s company, called Fincas Moncloa, became the club’s first sponsor of this fledgling team, along with MeHoCa, also early sponsors, who washed all the club’s rugby kit.

As Menorca rugby continued to grow, the team took a significant step forward by securing a home pitch. After a couple of meetings with the Mahón town hall officials, the club was offered the pitch next to Pallisers. This pitch has
remained the club’s home to this day and is called Estadi Municipal de Mahón.

The first year was an exciting time for the club with a three-way tournament against El Toro and Ponent rugby teams from Mallorca. Menorca lost both matches and gained new friendships in rugby. Menorca Rugby Club then joined the Balearic League, marking a significant milestone in the club’s development. The following season saw the team play six competitive matches, gaining valuable experience and honing its skills.

One of the highlights of the season was hosting its first ever touring side, the Weybridge Vandals. Whilst the result of the match may have faded from memory, the post-game drinks, dinner and a party will be forever etched in the
memory of those who played!

Around 2009, Guillermo Bibiloni Pons (known as ‘Bibi’) a member of Menorca Rugby Club, embarked on a new venture. Alongside like-minded individuals, Bibi decided to establish a new rugby club, Tramontana de Menorca Rugby.
For the next three to four years, Tramontana de Menorca Rugby Club competed in the Balearic League, travelling to Mallorca by plane and boat to participate in matches.

One of the club’s most significant contributions to the Island was promoting the sport of rugby in Menorcan schools. This initiative sparked genuine interest amongst boys and girls, helping to grow the sport on the Island. As the club’s
influence grew, so did the popularity of rugby, paving the way for a brighter future.

MERGING FOR THE GREATER GOOD
Three years after its inception, it became clear that merging Tramontana de Menorca Rugby Club with Menorca Rugby Club would be in the best interests of rugby on the Island. This union aimed to strengthen the sport, combining
resources, expertise, and passion to create a more robust and competitive team.

The club has various teams, including boys and girls seniors, juniors and younger age groups with training sessions held on Tuesdays and Thursdays. It also has a strong focus on youth development with programmes for children as young as 5 years old. Currently the club trains at CF Sporting de Mahón and plays matches at Camp Municipal de Ses Canaletes. All this whilst waiting for its w pitch to be ready at Estadi Municipal de Mahón. This of course all comes at a cost and at Menorca Rugby we realise the commitment level from the parents, trainers, and delegates to ensure the teams continue their development. All players show a commitment level that inspires support.

This is why we have opened a Go Fund Me page to encourage sponsorship for our journeys to the Spanish Nationals.
MENORCA PRESERVATION – THE ISLA DEL AIRE MARINE RESERVE:

A Collective Commitment to its Conservation
The Isla del Aire Marine Reserve (RMIA) was established through Decree 26/2019, following an agreement made by the Balearic Islands Government Council in its session on 12 April 2019. This decree defined the creation of the Marine Reserve and its territorial boundaries, covering 719 hectares, including a special diving zone around the perimeter of the Isla del Aire.

ISLA DEL AIRE: A HEAVEN FOR BIRDS, FLORA, AND ENDEMIC WILDLIFE
As one of Menorca’s most ecologically valuable enclaves, Isla del Aire stands as a testament to the island’s rich biodiversity and conservation efforts, re-inforcing the need for ongoing protection and sustainable management of this unique natural sanctuary.

A SANCTUARY FOR SEABIRDS AND MIGRATORY SPECIES
Isla del Aire is a vital nesting site for all of Menorca’s protected seabirds, including some of the island’s most emblematic species. Among them are the Scopoli’s shearwater (Calonectris diomedea), the Balearic shearwater (Puffinus mauretanicus), the European storm petrel (Hydrobates pelagicus), the European shag (Phalacrocorax aristotelis), the yellow-legged gull (Larus michahellis), and the Audouin’s gull (Ichthyateus audouinii). These species have been the focus of Menorca’s Ornithological Society’s (SOM Menorca) ongoing, long-term, research campaigns.

Beyond its rich birdlife inhabitants, Isla del Aire also plays a crucial role as a resting and feeding refuge for pre Saharan and trans-Saharan migratory birds. As part of the Piccole Isole project, led by SOM Menorca, an impressive 103,545 birds from 122 different migratory bird species were ringed on the islet between 1995 and 2024, providing valuable insights into bird migration patterns.

Muscicapa tyrrhenica © SOM Menorca

A REFUGE FOR RARE PLANTS AND ENDEMIC SPECIES
The island is also home to various threatened plant species, including the critically endangered Malva minoricensis, whose conservation status is of grave concern. The Atriplex tornabenei is also among the endangered species found here facing significant conservation challenges.

Meanwhile, the population of Lilford’s wall lizard (Podarcis lilfordi) remains stable and thriving, with an estimated 2,000 individuals per hectare. This species is endemic to the Balearic Islands, found only on the small islets surrounding Menorca, Mallorca, and Cabrera, making its presence on Isla del Aire particularly significant. Fun fact: these lizards are only black when on the islet and if moved they change to green.

MARINE LIFE IN THE RESERVE: A THRIVING UNDERWATER HABITAT
The marine environment of Isla del Aire Marine Reserve is characterised by an array of unique and diverse habitats, including Posidonia oceanica seagrass meadows, free sand beds, Cymodocea nodosa seagrass beds, rocky seabeds, and Maerl seabeds.

With the support of Menorca Preservation and in collaboration with the Spanish Oceanographic Institute (IEO), IME-OBSAM has been conducting long-term monitoring studies on more than 20 species of fish populations vulnerable to fishing within the Marine Reserve. These studies rely on visual census techniques to assess changes in fish communities over time and three years after the declaration of the Isla del Aire Marine Reserve (RMIA), the study’s results provided the first clear evidence of the positive Impact of the protection measures in place. The biomass (weight) of fish In the shallowest areas had doubled, while their abundance (number of Individuals) had also increased significantly.

This promising trend highlighted the importance of conservation efforts and reinforced the role of marine reserves in supporting biodiversity and promoting the recovery of vulnerable species.

WHAT CHANGED IN 2022? A STEP BACK ON FISHING RESTRICTIONS
In 2022, the Balearic Government’s General Directorate of Fisheries amended the Marine Reserve decree, reducing the area in which artisanal and recreational fishing is prohibited by 22%, significantly limiting the protection of deep-sea rocky bottoms. This re-adjustment also modified regulations on the extraction of marine flora and fauna and underwater activities.

THE RESPONSE: A NEW APPROACH TO SAFEGUARDING THE MARINE RESERVE
These changes have raised concerns among various environmental organisations specialising in marine conservation. In response, Menorca Preservation, with the technical involvement of IME-OBSAM and GOB Menorca, launched the development of a Participatory Governance Strategy for both the marine and terrestrial areas of the Marine Reserve to identify solutions that would highlight the significant economic, social, and environmental benefits of protecting this vital natural area.

A WHOLE NEW STRATEGY: 50 KEY ACTIONS FOR THE MARINE RESERVE
Developed by environmental scientist Irene Estaún Clarisó, this strategy sets out 50 key actions to strengthen the protection and management of the IIsla del Aire Marine Reserve. It focuses on enhancing holistic knowledge of the natural environment, ensuring a governance model rooted in community engagement and active participation from key stakeholders. Additionally, it promotes awareness, education, and communication about the RMIA’s ecological value while reinforcing monitoring efforts and ecological connectivity. Another essential element is the development of collaboration networks between organisations that share common conservation goals, fostering collective action for marine protection.

This initiative represents a significant step forward in securing the long-term sustainability of the Isla del Aire Marine Reserve, strengthening Menorca’s role as a model for community-driven marine conservation.

WHY COMMUNITY INVOLVEMENT MATTERS
One of the key insights highlighted by the Strategy is the importance of engaging the local community in the protection of the Isla del Aire Marine Reserve. Raising awareness about the ecological and economic benefits of conservation is crucial—not only for the health of the surrounding environment but also for the local economy!
For instance, a 2021 study conducted by the Marilles Foundation, in collaboration with the Balearic Centre for Applied Biology and Ecoasa, found that for every euro invested annually in the Llevant Marine Reserve of Fishing Interest in Mallorca, €10 in benefits were generated. This demonstrates the significant economic value of well-managed marine reserves and the importance of community support in ensuring their success.

FIRST STEPS: ESTABLISHING THE FORUM
In mid-2024, Menorca Preservation secured the necessary funding to carry out the first actions outlined in the Participatory Governance Strategy and launch the first Participatory Forum for the RMIA. During the first session on 12 February 2025, the first Participatory Governance Forum was officially established. During the session, participants identified key challenges faced by the Marine Reserve, including lack of surveillance, pollution, and the impact of boating activities in the area. In response, the Forum proposed concrete solutions, such as creating an informative website, installing signage in the area, establishing best practices for key sectors, and organising workshops to raise awareness.

WHAT’S NEXT?
Menorca Preservation will focus on activating dedicated working groups to advance the proposed solutions and preparing the next participatory workshop to continue strengthening the governance of the RMIA.

WOULD YOU LIKE TO GET INVOLVED?
The protection of the Isla del Aire Marine Reserve is a collective effort that thrives on community involvement and shared responsibility. Whether by joining the Participatory Forum, contributing expertise, or providing financial support, your involvement can make a huge impact in safeguarding this unique ecosystem.
Together, we can ensure a thriving future for the Marine Reserve, where conservation and sustainable use go hand in hand. Get involved today and help shape the future of Menorca’s natural heritage!

He came from behind in an agonising final sprint in the last 200 metres of the race.

The triathlon consisted of an initial segment of 750 metres of swimming in the Seine, 20 km of cycling and five km of running. Nil left the water in eighth position, 1’45” behind Frenchman Alexis Hanquinquant, who dominated the race until the end. Nil managed to gain two positions in the bicycle segment, when he was 49 seconds behind the third-placed Frenchman Pierre-Antoine Baele. But Riudavets was confident in his running and gradually closed in and overtook Baele. The American Carson Clough took the silver.

Riudavets said he knew he still had a chance for a medal despite leaving the bike 49 seconds behind Baele. He told reporters, “Mentally, I had to be very focused to do my race and see how far I could go. I was passing people. First I passed the British, then the first Frenchman and then the last Frenchman. I was slowly making up ground and we played it out in the last 200 metres in an agonising sprint”. He said it was an incredible experience and his partner, family and friends were there to cheer him on during the race.

Nil Riudavets’ life changed when he lost the use of his right arm after a head-on collision while riding at high speed in a triathlon five years ago. He was 23 years old and had been doing triathlons since he was a boy. He went through a difficult period trying to adapt to his new situation forgetting about sport, and especially the triathlon, which could have killed him. After three years he felt ready to run the marathon in the Paralympic Games but when they withdrew his category he overcame his fears and decided to go back to the triathlon. He took first place in the Paralympic Triathlon World Cup in A Coruña in 2022 and last year he was European runner-up in Madrid and took first place in the World Cups in Alhandra (Portugal) and Abu Dhabi (United Arab Emirates).

Riudavets is part of the CaixaBank Paralympic Promises Triathlon Team, a project of the Spanish Paralympic Committee (CPE) and the Spanish Triathlon Federation (FETRI) that aims to prepare the most promising athletes for the highest level.

CF Sporting de Mahón, the mens football team, won a coveted place in the qualifying round of the Copa del Rey. They were proclaimed champions of the Copa Illes Balears after defeating CF La Unión on 9 September. The match, played in Mallorca, was extremely evenly matched. Despite the efforts of both sides, there were no goals, both after 90 minutes, and 30 minutes of extra time, so the title was decided from the penalty spot. The Mahón team, won the shoot-out 5-3, unleashing euphoria among the team.

The Combat 2 Coffee charity was inspired by Nigel Seaman who began suffering from depression, anxiety and flashbacks from an incident during his time on operations with the armed forces. He was formally diagnosed as suffering from Post-Traumatic Stress Disorder (PTSD) and was accepted onto a 6-week trauma related residential course. He took his coffee machine with him and noticed what a draw this was to other veterans and serving personnel. He realised that people felt comfortable to talk about difficult things and enjoy community over a cup of coffee.

The Combat2Coffee project was set up in 2018 and the dedicated team provides outreach to veterans and their families through mobile coffee vans that travel far and wide. There is also a dedicated outreach worker and cafes in Bury St Edmunds and Ipswich.

by Caroline Langlois, Consulta Veterinaria Menorca

Last March 29th, Law 7/2023 on the protection of animal rights and welfare, better known as “Ley de bienestar animal” was published in the Government’s Official Journal. At the time of writing, it was supposed to come into effect on September 29th, but there may be further delays to clarify some of the new laws. In this article, I will present the main points of the law and the changes it will bring for pet owners.

WHAT IS THE NEW SPANISH ANIMAL WELFARE LAW?

The law means to regulate and control the keeping and treatment of pets within the Spanish territory. Its aim, as stated in the Official Journal document, is to protect and guarantee the welfare of domestic animals residing in Spanish territory.

It establishes the obligation to treat them in accordance with their status as “sentient beings”, The owners or people responsible for the animals are obliged to treat them in accordance with this status. They will also be liable for any damage, harm or nuisance caused by the animals.

One of the key points in the law is the intensification of penalties for mistreatment. Abandonment could cost between 500 and 10,000 € in fines, depending on the circumstances. If it is considered “serious”, the act could be punished with fines up to 50,000 €, and if it is deemed “very serious”, then the penalty would be up to 200,000 €. In addition, any offence involving animal suffering will be punishable by disqualification of ownership for up to 10 years; and in the case of death, imprisonment of between 18 months and 3 years.

WHAT IS MEANT BY “PETS”?

The first point to be clarified is which animals will be considered pets.

According to the definitions given in Article 3, a pet is a “domestic or wild animal in captivity” which is kept by humans “mainly in the home” if it has suitable conditions which “respect its ethnological needs, and is not intended to be bred for consumption, production or industrial use, or to be used for profit.

Until now, an exclusion list was followed: a series of animals, mainly those classified as protected or invasive species, could not be kept as pets. The new law, on the other hand, will work by inclusion: there will be a “positive list” of animals that can be kept as pets and it will be illegal to keep those that are not included in this list, which should be published within 4 years of the law’s application.

Likewise, the regulations establish the following as pets:
• Dogs, cats and ferrets.
• Domestic animals included in the list to be drawn up.
• Production animals that are registered as pets by decision of their owner.
• Aquarium animals not included in the catalogue of invasive alien species or protected wild species.
• Animals belonging to wild species that are included in the positive list.

The law does not apply to the following: animals used in bullfighting shows, production animals, those used for scientific experimentation, wild animals, animals used in certain activities such as sports, falconry birds, livestock herding dogs, rescue dogs, animals belonging to the Security Forces and Corps. Finally, after much debate, hunting dogs have also been excluded.

In any case, in principle the law will not be applied retroactively and those who have animals not included in the list will be able to keep them. They will just have to declare them to the authorities within 6 months of the list being published.

For example, now, we do not know whether small birds such as parakeets, rabbits or rodents will be on this list, but until it is published, they can be kept without declaration by their owners.

KEY POINTS OF THE NEW SPANISH ANIMAL WELFARE LAW

• Prohibition to leave a pet alone for more than 3 days, or 1 day for dogs
The law prohibits leaving your pet alone for more than 3 days or 72 hours. This period is shortened to 24 hours for dogs.

In addition, it is also forbidden to keep your pet on terraces, balconies or roof terraces, in storage rooms, basements, courtyards and the like, or in vehicles. The use of any handling equipment that may cause injury to the animal (electric, impulse, punishment or choke collars) is also prohibited.

• The sale of dogs, cats and ferrets may only be carried out by authorized breeders
The sale of these pets will only be allowed by licensed breeders duly registered in the Register of Pet Breeders. The participation of mediators in the process is prohibited, as well as the sale by private individuals.

The new law also establishes a series of criteria aimed at guaranteeing the welfare of the animals selected for breeding, such as limiting the number of litters per year and ensuring that they have adequate space and treatment.

A written contract of sale is required, and the sale must be reported to the Pet Register within three working days of the sale. In addition, dogs and cats must be at least two months old.

In the case of pet shops, only fishes, rodents and birds may be sold and these must come from registered breeders. The display of any animal in shop windows shall also be prohibited. Shops selling dogs, cats and ferrets will have 12 months after the entry into force of this law to end this activity.

• The classification of potentially dangerous breeds (PPP) is maintained
One of the last-minute changes has been the modification of the draft regarding the PPP Law, which was initially going to be replaced by sociability tests and a new denomination of dogs needing special handling.

The following breeds: Pit Bull Terrier, Rottweiler, Dogo Argentino, Staffordshire Bull Terrier, American Staffordshire Terrier, Fila Brasileño, Tosa Inu and Akita Inu, continue to be potentially dangerous breeds. Their owners need an administrative licence, special insurance and they must use a short leash, muzzle, and they cannot be allowed to walk off the lead in areas designated for other dogs.

However, not everything has been agreed, as General Directorate for Animal Rights continues to support the idea of repealing the PPP Law in order to implement a sociability test for dogs classified as potentially dangerous, as well as for large dogs.

• Pets’ euthanasia for economic reasons is strictly forbidden
Euthanasia of pets may only be carried out for health or medical reasons, never for financial or economic reasons.

• Compulsory sterilisation of all cats from 6 months of age onwards
To try to reduce uncontrolled breeding and future abandonment, all cats will be obliged to be sterilised, regardless of breed, gender or status of the feline.

In the case of sterilisation for dogs, it will only be compulsory when they are placed for adoption by animal protection organisations or public centres.

• Mandatory identification of cats and ferrets, like dogs, by microchip
The identification of pets shall be carried out by a veterinarian in the name of an authorized registered breeder, animal protection organization or public administration. All pets shall be registered in the Pets Register of each Autonomous Community.

In this way, there will be greater control over cats and ferrets, as is currently the case with dogs.

The aim is to reduce abandonment. Birds will be identified by ringing from birth

• Compulsory training course for responsible dog ownership
All people who want to keep a dog as a pet will have to prove that they have completed a compulsory course for dog ownership. Its aim is to train citizens in the correct ownership and care of their dogs. This training will be compulsory both for new owners and for those who already live with their dog at home.

The only thing that is known for certain is that it will be free of charge and that it will have to be taken by all those who wish to own a dog, while those who already have one or more dogs will have two years to take the course. In principle, once it has been passed, it will be valid indefinitely. However, the course contents and the criteria for passing it, have not yet been defined, nor how it will be taught, although in principle it should be online. The two biggest questions are: what will happen if a dog owner doesn’t take the course within the established period, or if he doesn’t pass it?

• Civil liability insurance for dogs.
Civil liability insurance for dogs is already compulsory throughout the Community of Madrid. The new law will make it compulsory for all dogs in Spanish territory, with the aim of ensuring responsibility for any damage they may cause.

The Spanish Animal Welfare Act was due to come into effect at the end of September 2023. However, at the time of writing, several doubts remained, and a number of clarifications had to be made. I will keep readers informed of any new information on this law in the next issues.

For this article we are concentrating on GODAI. the ‘first Japanese- Menorcan restaurant in the world’ led by Julián Mármol. Intrigued by the stories of a self-taught chef with a Michelin star who has prepared sushi for the stars, we wanted to find out more and he was only too happy to meet up and chat.

Julián Mármol opened GODAI restaurant in the Lago resort of Cala’n Bosch in 2021 and immediately hit the headlines when the footballer Ronaldo published a picture of himself at the restaurant with his friends, sports journalist Edu Aguirre and physical trainer Tony Falco. Julian has many friends in celebrity circles and it was Richard Gere who helped to put his first restaurant Yugo the Bunker on the map. He now has several restaurants in Madrid and GODAI in Menorca. Godai are the five elements in Japanese Buddhist thought of earth (chi), water (sui), fire (ka), wind (fu), and void (ku).

Tell me how your career as a chef started
I worked in the car industry for 15 years, latterly as a Commercial Director for Nissan in Madrid. The company paid for me to do a Masters in Asiatic Studies which introduced me to the Japanese culture. Once I had discovered sushi I was hooked and it became my obsession. I was invited to participate as a sushi chef at a private party in Madrid and it was such a success that people suggested I should change career. To begin with I dismissed the idea but after a few more similar experiences I began to realise it could become a reality.

So tell me about your first restaurant
I set up Yugo the Bunker as a private club in Madrid. My idea was to replicate the idea of a traditional Japanese pub or izakaya. In the basement there was a private room for club members, based on a bunker from WW2. It became quite well known and then the food writer José Carlos Capel from El Pais visited and wrote a review. Richard Gere and his Spanish partner, Alejandra Silva, soon followed and then the phone never stopped ringing. I had to move to new premises with an open restaurant on one floor and a private dining club in the bunker below. In 2019 we were awarded a Michelin Star for the first time and it has been renewed each year, including 2023.

And you now have 6 restaurants in total?
Yes, I have KUU which I call our R&D centre where a group of 12 people help us develop all the recipes for all the restaurants. The Japanese Ambassador explained the concept of KUU to me; it translates as self-taught, creating something without any foundation or out of empty space. Shikence is a project that I have been developing for five years and it is Mexican cuisine with a Japanese philosophy. Monchis is an offshoot of this idea based in Canalejas Food Hall in Madrid. I create tacos and tamales as tiny perfectly made snacks under the influence of Japan. The Eight is a grill, also in Canalejas Food Hall, which redefines hamburgers and sandwiches, the meats being cooked on a Japanese charcoal grill.

Why did you choose to open a restaurant in Menorca?
I wanted a restaurant next to the sea and Menorca offers superb local fish and my favourite ‘mariscos’ or shellfish. The hotel has its own garden less than 2 km from the restaurant and so we can source the best local products. I call my cuisine ‘fusion without confusion’, based on how I like to see sushi and interpreting it in my own way. I always respect the main product and add something to balance or to improve it but never to mask it.

What can diners expect at GODAI this summer?
I combine the Japanese and Mediterranean cuisine, taking the finest local ingredients and preparing them with the minutest attention to detail to create unique taste sensations.

You can choose from our a la carte menu but if you want something special we have a tasting menu which can take you on a journey from Menorca to Japan. It can be paired with Spanish wines or with Sake or with a combination of the two. The Tasting Menu has 10 different sushi such as Island red prawn Nigiri with Japanese Garlic, tempura lobster with coral broth slaw and Su Mai of sardine with citrus béarnaise from our lemon trees. There is then a choice of black cod Shiromoso with miso and yuzo chives from our own garden or Wagyu hamburger and for dessert there is Matcha French toast or chocolate Milcrep with Menorcan apricots (Tasting Menu Price 135 €)

How much time do you spend in Menorca
The restaurant is open from June to September (adults only) and I spend 7 days a month here over the 4 months. I have two daughters (from different mothers) and they have been here for holidays too.

Do you have new ideas for the future?
I have a new project called Club Unique and I am excited by the idea of introducing new sensory experiences to our gastronomy. This is Kuu through technology, sounds, aromas and projections and we hope to achieve a unique experience.

Julian is 47 years old and despite his fame, he is open and friendly and was happy to spend time talking to us. He showed us pictures of his amazing home in Madrid which is furnished with many beautiful objects including an illuminated onyx coffee table and a full tree inside the apartment. He laughed when John suggested it was not exactly Feng Shui. With so many restaurants and a home designed for entertaining it is perhaps easier to understand why he has never had time to visit Japan!

This month we talk to Matthew Meacham, the British owner of Sa Punta restaurant in Es Castell. In a very short time, Matthew has made a big impression on the island’s food scene. He has used his expertise in designing and implementing winning strategies to develop this beautiful go-to restaurant and tapas bar. With more than 30 years of experience working with some of the world’s leading food and beverage companies, he has also focused his attention on local company Herbes Biniarbolla. Matthew has been working with Cristina Quintana to relaunch the range of liqueurs and reposition the brands of iNNat and GLOP Gin.

When did your relationship with Menorca begin?
I first came to Menorca, sailing from Barcelona, when I was just 16 years old. My wife came first when she was 7, to stay with a British aunt in Llucmacanes. Then, 22 years ago, while living in Dallas, we bought a house here and my family have grown up loving the island. I have worked for Bain & Company for most of my career, living in 8 countries around the world. Menorca became a wonderful place to escape from business and spend time with my family. We used to enjoy a quiet existence on the island, and we were very anonymous for 20 years. Unfortunately Sa Punta has changed that!

Your restaurant Sa Punta has been fully booked for the last two summers. It has become a highly popular choice for summer visitors and local residents. Has your background contributed to its success?
In 2021, I decided it was time to invest in Menorca and I looked at several options. The restaurant of the historic yacht club, Club Nautico Villa Carlos, had been recently refurbished to a very high standard by a businessman from Ciutadella. He had taken great care to modernise the interior and adapt it to current trends, while maintaining the essence of Calas Fonts. The building has the most fantastic, panoramic outlook over the entrance to the harbour, and it was available on a 20-year lease. I could see that, with the right team in place, we could turn it into a successful restaurant. We also took the decision to open all year round, and this has helped develop a loyal customer base. We have become a sought-after venue for special occasions, hosting club dinners, weddings and offering special menus to mark events such as Christmas and New Year. Our aim is to give you a special experience, offering local fresh seasonal products, beautifully presented by our chef.

In addition to Sa Punta, we opened Moll de Sa Punta underneath the main restaurant. This is a less formal tapas bar with direct access onto the quay in Calas Fonts. Historically, it was a ‘barete’ where fisherman used to meet up for breakfast on the pier after returning from fishing at dawn. We wanted to turn it back into a place where local people can meet and enjoy a drink and a snack. This year we have launched an exciting cocktail offer which we hope people will love.

Both the restaurant and Moll de Sa Punta are great places to sit and watch the yachts and boats as they sail up and the harbour.

I understand you have just finished a full audit of the sources of the food and drink used in the restaurant.
We really believe in supporting local producers and have high traceability and low transportation impact of our purchases. Indeed, in 2023 to date, over two thirds of our food and drink purchased was cultivated, caught or produced on Menorca!

Tell me how you have been involved with Biniarbolla
I heard about Biniarbolla in January 2021. I met Cristina and very quickly agreed a plan to relaunch her family business, recovering, preserving and honouring Menorca brands with such terrific heritage. Her grandparents had started making Herbes for the monks in the 1930s. Her father created the SL, and Cristina took over the business in 2014. She launched the gin brands, first with iNNat, and then with GLOP. iNNat is the premium gin brand of Menorca, winning Best Gin Balearics in 2017 and achieving 92 points from Guia Penin. Cristina was doing so well until COVID hit. The market disappeared and the company ran out of cash. Hacienda came down hard on her business, forcing her to destroy all the stock. It has been such a pleasure to work with her to rebuild the business.

What is the history of the company? I hear that there are many stories and legends.
The monks at Monte Toro had a secret recipe for ‘herbal tea’ involving 16 herbs and a few grains of coffee with cold maceration from 5 weeks. Cristina’s grandfather bought alcohol to the island and his wife, the abuela picked herbs and aromatics from the finca of Binissaida de Barrancons. With the monks’ recipe, la abuela made the first Herbes.

Binissaida de Barracones is in the mouth of the port with access to the sea, and it is said that in times past, the caves below were used to smuggle in contraband from the sea. There are tales of her people dressing up as monks and nuns to transport products hidden in coffins, and many other stories.

How have you developed the brands over the last 2 years?
In 2021, we bought the brands and the equipment. We started by building a new factory on the industrial estate in Es Castell. Ironically, in this instance COVID came to our aid, and we were given help to get the permits more quickly. Then Putin invaded Ukraine and there were new problems to overcome, such as delays in bottle production.

We took the decision early on to take the products back to the original recipes and to increase the quality. Herbal liqueurs are a digestif, offered after a meal, but many people had grown accustomed to the cheaper, anise-based industrial Herbes from Mallorca. We were convinced that people would pay for a quality Menorca product with heritage.

Biniarbolla uses 16 herbs to make three types of herb liqueur: Herbes Seques(dry) Herbes Semi Doces and Herbes Doces (sweet). Rosemary, aniseed, pine, camomile, thyme, lemon and many other locally grown herbs are left to cold macerate for over 40 days to produce a refined liqueur with no additives. The herbs still come from Binissaida des Barrancons, which is close to the factory and which is part of Menorca’s Land Stewardship Programme, using regenerative agriculture. Binarbolla’s liqueurs are now served with pride as a digestif in our restaurant and we also use them as a base for cocktails such as Herbes Sour.

We also launched a limited edition of Licor de Mandarina. Macerating 200 kilos of mandarins from the family’s original “huerto”, we have created 2700 bottles, very popular with barmen on the island.

You also have two brands of Gin – iNNat and GLOP. What are the differences between the two?
I like to describe iNNat as a connoisseur’s classic with a hint of the island. It is the premium gin of the island. We macerate juniper with pine, rosemary, lemon, and a touch of red fruits and blueberries to give it a distinct flavour. We try to minimise the impact on the environment whenever possible, and our latest initiative is to re-use the bottles. At wedding events, to give one example, we can easily collect, clean and refill the bottles. Each bottle of iNNat gin is hand numbered. Each time it is re-used, the bottle is laser stamped so you will be able to see how many times it has been refilled.

The GLOP gin is more citric in taste, younger and more relaxed. It is ideal for events and parties. It has been adopted as the “house” gin in many cocktail bars across the island including BB Cocktail Bar in Binibeca, and Cova del Sol in Torret. GLOP Negro is perfect for Gin & Tonic and also makes a great Mojito. GLOP Rosé with ginger ale and a slice of grapefruit is an ideal summer cocktail, which has become quite popular at the cricket club, I understand. We have had fun with the marketing on Instagram, rebuilding a wrecked Fiat car and branding it to promote GLOP across the island.

Finally, how do you relax when you are not working? Do you still get the chance to sail?
Yes, I have a classic yacht, a West Solent One Design, called Winnie Marie, that I keep at Marina Menorca. I take part in the Vela Clasica regatta in Mahon each year at the end of August. There is one other West Solent on the island and so my main objective is to finish ahead of my rival. Haven’t done it yet…
